Cast iron has a wonderfully rich history in America, starting with the pilgrims bringing their cast iron to the New World, continuing in wagon trains across the west and finally ending up in our kitchens today. Cast iron is wonderful to use indoors or out, so go ahead and use it all day, every day, no matter what you're cooking, you know it's going to taste better when cooked in cast iron.

While many folks adore their cast iron, there are just as many folks who are almost afraid of it. Cast iron is actually quite easy to use once you know how to season it, maintain that seasoning and how to care for older pieces that may not be in the best shape. There are lots of tricks and tips that have been used over the years to make cooking with cast iron easier than ever.
